I understand that aspect, and it IS part of roleplay. What I don't think is part of roleplay is not having your buddies be able to come to your aid, not having police show up in a 1.0 security system, and having the thief be able to go run and hide in a public place so as to avoid all punishment.
I really don't care about fairness. Fairness is just a slap to my ego. What really sucks about it is the way it destroys roleplay!
Couple of things - first of all if you're in a starter (NPC) corp you don't HAVE any buddies. If you have friends in-game then get together and make yourselves a real corp. Then you can defend each other.
The way to think of EVE is a bit like the old American Wild West. Sure, there's some kind of law but it's not very organised and it's overworked - they don't come running for little things like ore theft. They have their hands full protecting people from actual violence.
And of course they only operate in a tiny section of the universe - the majority of EVE systems are lawless.
Mining in 1.0 systems is, regardless of the roleplay ascpect of it, a really bad way to make money. 1.0 is stuffed with macro-miners, sweatshop operations, ore theives, idiots and scammers. Get out into lower sec systems as fast as you can, but learn to protect yourselves too.
Your strength in this game comes only through numbers - operating solo will get you ripped off, shot at, killed and worse. At the very least it'll get you very bored! Ger your buddies together, form a corp, get into lower sec than 1.0 and prepare to fight back, you'll have much more fun, and make much more money 
edit: Oh, and I hate to say it, but RP in general is terrible in EVE. The immersion is generally rubbish because so much of the game is meta-gaming orientated. There's scant attention given to dressing game mechanics up in lore, they're just put there to make the game work - don't get hung up on it, just accept it and learn to live with the fact that CCP may be great game designers but they are probably the worst in the business at creating RP and immersion
